Healthy Cooking with Carol Salsa
For those who missed the cooking with Carol class on Friday here’s the delicious and healthy recipe for the salsa that was made by our very own Chefs Lucas and Kyle.
WELLNESS SALSA
- 4 CUPS FRESH TOMATOES – CHOPPED
- 1/2 CUP CILANTRO – CHOPPED
- 1/2 CUP FRESH PARSLEY-CHOPPED
- 1 CUP CELERY – CHOPPED
- 1 CUP GREENS ONION – CHOPPED
- 1 CUP ENGLISH CUCUMBER, UNPEELED – CHOPPED
- 1 CUP RED ONIONS – CHOPPED
- 1 CUP GARBANZO BEANS (CHICK PEAS) – DRAINED AND RINSED
- ¼ CUP LEMON JUICE
- 2 TBSP EXTRA VIRGIN OLIVE OIL
- 1/2 CUP FAT-FREE ITALIAN DRESSING
- 1 TBSP ROASTED GARLIC – CHOPPED
- 1 TBSP FRESH GARLIC- CHOPPED
- 1 TBSP FRESH BASIL- CHOPPED
- 1 TSP GARLIC-PEPPER SALT (OPTIONAL)
- 1 JALAPENO PEPPER (OPTIONAL)
DIRECTIONS
- MIX ALL INGREDIENTS IN A LARGE BOWL.
- REFRIGERATE FOR AT LEAST 2 HOURS BEFORE SERVING.
- SERVE WITH A STURDY CHIP LIKE MULTIGRAIN SCOOPS OR HOMEMADE CHIPS FROM TORTILLAS.
